Subject: left shredded cheese out overnight - throw away?

Got home from the grocery about 8 last night, and the large bag of shredded taco cheese didn't make it into the fridge. I found it about 9 this morning on the kitchen counter. Throw away?

Was it left open or closed? If there's no mold, and it hasn't dried out, then it's fine. The whole point of cheese is to preserve food, before we had refrigerators.

I would toss it. Cheese should be kept refrigerated.

No, WRONG.

Leaving cheeses unrefrigerated for long periods of time will dry them out and cause a thin layer of oil to separate from and coat the cheese. It will also rapidly accelerate their shelf life. But it doesn't have to be.

You know nothing about cheese, clearly.

People eat left out pizza all the time. I wouldn't feed to my kid, it's probably fine to eat for sure

I'd keep it if it is natural cheese. People have eaten cheese for centuries without benefit of refrigeration. On the counter in an air conditioned home for one night in its packaging is perfectly fine.

An unopened bag? I would definitely keep. Heck, I forgot to put some store-bought pesto in the fridge (still sealed) and didn't find it till the next day. We still ate it and we all lived to tell the tale.
